Coins, dried beans, pasta, matchsticks, board-game money, or playing cards from a second deck all work. Pick three item types for three denominations (for example 1 / 5 / 25), give every player an identical bank, and agree on values out loud before the first deal. The weakness: counting is slow and mid-game rebuys get messy.
One player becomes the banker and writes every bet, call, and pote on a sheet. It works for very small games, but betting slows to the banker's pen, all-ins and side potees invite mistakes, and nobody can see stack sizes at a glance — which changes how people play.
